I personally have a thing for the headshots in Dawn of the Dead (original) and The Beyond.

Oh yeah, good one. I like the shotgun to the face in Maniac, myself. They blew up a watermelon to get the right effect. Vintage Savini.

Kristy Swanson obliterating the old woman's head with a basketball in Deadly Friend. Then seeing the headless old woman jostle about with a bloody neck.

The Omen - plate glass severed acrobatic noggin'
Friday the 13th - mommy's head removed with more acrobatics
Day of the Dead - head pulled-off while screaming, pitch raises as neck is stretched
Blood Sucking Freaks - the brain sucked out of woman's skull ... wait a minute, that doesn't count... sorry

Hmm, I had heard the watermelon thing. Cool way to do the effect, and to shoot a sequence that quickly, too...

If my memory serves correctly, I was impressed by the suicide head-shot in The Devil's Advocate. I'm not sure if that classifies as a horror movie, though.
